I have made some good decision's in the last couple of weeks, one of the best one's was to stop smoking, as part of my therapy I will post a comment when I have another ciggarette, I've made lot's of friends, some near, some far away & tried to be good, got my ass kicked on the fairway & there is revenge planning, made butter, oxtail stew & gearing up for the summer, c'mon, help me book it out.

Golf is back & played last monday for the first time in about 5 months, missed the open this year because I still had 5 stiches in my knee after an operation to remove some cartilege, played 2 balls from the tee & the wheels fell off only when I started to think about what I was doing, new things this year have been beef cheeks, gummy tempura & octopus terrine, had the beef & burg lads in last night & had the challenge of poaching a whole Atlatic salmon, had to build a fish kettle & managed to get it right, the lads were very impressed, oysters are back & better then ever, will update the menu soon.

It's holiday time, lots of things planned, will it all happen, who knows? 1 thing for sure is that good things will happen, golf will be a challenge, hope I win something out on the course & do the right thing. My apoligies to travellers to King Island in the month of June, I will not be here, I as you do, I have to holiday, July, August & September will be a good time to visit.

Happy birthday Charles Darwin, did get to Tassie in his life, lucky man, good golf news, will play in a 4bbb on Sat with the great Wog as my partner, first comp for a while so a good one to start the winter campaign, plan to play a bit this year as I can take a holiday, will try to get to the sapphire coast for a week of comp's in july, apart from that it's been Hot here but cooler then elsewhere, my thoughts and condolence's are with the family's of Victoria.

What can I say, well I'll tell you about my day, I'll start when I walk out the door & got some lavender from dottie's garden to make some candy, got to the shop & made panna cotta from gelatine that I made a mistake in an order, will be on the menu forever, nows the time for an apprentice I think, can I get some help?, Mr Ezzy & friend were met on the footpath at 11.30, I let them in to relax with a bottle of red, some tender moments glimpsed from the kitchen from a couple in love, after that I reset the restaurant for dinner service, the mongrel & the vet were in for lunch & I had another whinge about people not booking, chaseing my tail there I think, if your thinking of doing the flight for some good food MAKE A BOOKING.

First day of spring & the farmers are getting happy about the best rain all year, unlike the rest of the country, almost average rainfall so far this year with a good soaking as I write this, so to the menu & whats on at the moment, been making puff pastry to use for the apples from the Perry farm & some good ox tail pies for the bar with parsnip mash, the produce from Camp Creek has finished & looking foward to the next great harvest, helps me in food mile points, honeycomb ice cream & Bindaree lemon pie are other goodies, the footy has finished & Grassy hawks almost caused the upset of the year winning the semi against Currie to get into the grand final againts North, only game they won all year, you only have to win two games a year in this comp, saw the third Qr & some of the 4th, then had to get to the shop. Good golfing action on the horizon, club champs soon & the King Island open is on the 1st & 2nd of Nov, if you can swing a bat & are here that w/end contact the club on 03 64621126, played the last 2 comps for a 92 & 98, great links course.

Ox tail stew is on with garlic & parsley from Camp Creek made into a gremolata, must say Im disappointed to see uncleaned bones on the plates, you must be armed with several napkins & a finger bowl to get the most of this great tucker, still pickling beetroot & got a recipe from the grower for a risotto that I will try next week, Hi to all the sailors that were here at the start of Jan, Stonehaven cup was a great week, King Island came 2nd , looking forward to another regatta in 3 years time

So, what did I do this week, revisited panna cotta, pickled some beetroot for roast rump later on, gummy shark with chilli spinach, got menu's organized for beef & burg next week so if your here on 14th Dec is full, also gave the boat club a hand with their regatta coup of the stonehaven cup for cadet sailors to be held in early Jan, will be a huge week.

Hi, back again after a bit of winter discontentment & some wild weather here, made my 3rd batch of feta last week, hope I'm getting the hang of it, its cooking in a slow sort of way. Made some pasta this week & some good tortellini, feta, pancetta, olives & rosemary, very tasty dish with good comments from the locals, they take ages to make so I hope I can keep them on the menu. The footy season is almost over, Grassy has a game next week get into the final, not a good year for the team with some good players missing, have not played much golf but will try to get some games in before the open at the start of November, if you read this before then try to get here, great w/end on a great course.

Got very busy early tonight, not happened for a while, good to feel that buzz again, industry people will know what I mean, sellers were the smoked chedder stuffed chicken with braised celery & slow cooked pork belly, the bar was busy as well with the roast pork almost out, made a nice apple sauce from scratch to go with it, local ones of course, no comp golf till the 22 july but a nice social game coming up with an old mate from the mainland.

Stevo got some flathead & shark from Grassy bay, had some pickled quince I did a while ago so I made a mayonnaise with it to serve with the flathead, works well. Cut chunky steaks from the gummy shark to char grill & made a good Asian salad to go with it, No golf as the weather has been a shocker, it will improve.

Almost played golf this week, a nice 82, 41 out & in, birds on 1st & 13th, was a s/ford multiplier & my partner did not have a good day.

January has been my best month ever after being here for nearly 4 years, Big up your-self to Fred Harden & the Regional food team, great job guys, lets hope it continues. Lots of summer produce coming into the kitchen, strawberry's, rhubarb, nectarines & Fred perry's award winning dutch cream potatoes. A special event on 16th Feb, Jason Roberts is a local artist who has painted an octopus on the kitchen window & will finish it during meal times, starting at about 6.30pm, some of his art work will be for sale as well. Bookings will be advisable for this night

Shit, another month just skipped by & not much has changed, the weather is trying to improve, it did for the King Island open, I shot 94 & 106, I must have had a good time on Sat night. Good to see some old mates & have a weekend off. Nice ox tongue, veal shank's, rendang curry & rump steak on the menu this week.

I still think I should write a letter to the courier about people booking a table on King Island, if your going out for dinner a quick phone call is very helpful to the chosen destination, you let the staff know & it always helps, Dr Phil will be here soon so I have to play some golf, the potential apprentice shoud be able to cope, very impressed, this is going to be a great summer.

Very busy week on the way, Clarenden kids tonight, a beef & burg on Thurs, then the weekend, hope I can get a game in, if its not raining I'll be there so if you go to the Grassy club for Sat lunch Janis Perry is doing the chops, have a talk & I'm sure it will be good. Got some nice venison ageing in the coolroom, local stuff, made a nice grill tonight, stay tuned!!.

The hawks won, sensational, had a nice 44 on tues, first game for a month, the open is on after the Melb cup(due to a stuff up in the calander) on the 5th & 6th November, get here if you can, will be a great weekend. On the food front it might take a while to get over but I hope things won't change too much

Lot of work to do now, huge thanks to Fred Harden, Jackie Cooper & all the team at Regional Food. Every one has to cheer for the Grassy Hawks football team contesting the grand final on Saturday against Currie, they have a big hoodoo to get over, Good Luck Hawks.

Stop Press!!! Regional Food magazine sold out in Currie, not a copy to be had at lunchtime. Left an order for 3 copies. Been a couple of busy weeks that just got busier, had a shocker on Sat night after the footy, all my best staff unavailable & flat out, then I ran out of chips, worst night ever, but you get that. Thursday night was a total oppisite, an almost full restaurant & just me to wash up. Next time you have a beer or bundy say" How ya going Jezza", great bloke with a heart of gold & brown, Go Grassy, sure to win the flag this year.

The best day for golf today, crisp westerly blowing with a warming sun on the shortest day of the year, but I had to forgo the sporting pleasure to cook for the end of term smorgasbord for Ballarat & Clarendon College, was keen after hearing that Alice Cooper has had 3 holes in one & cousin Cambell won the US open, cooked up a feast of beef & red wine stew, roast lamb(from the Perry farm) & roast chicken with honey, ginger & chilli. The chocolate sticky date pudd with caramel sauce is the one that I can't not cook for this, always get asked if its on. Good response so I hope I get some stayers as its getting a bit quiet. Got a hot stock tip, get onto GTN Resources, into the 2nd month drilling at the mine here & look like opening next year.

Glad to see that old colac town has made the papers, not for the fist time, back in the 70's me & me mate Geoff made news about underage drinking in a blue light disco, was almost front page years ago, now its a Bogan town as it should be, thanks to neigbours, GET REAL COLAC, its just a joke, I was called Bazza the Bogan at Florentino & I love it, from a pastry poof called Criss the pastry puff.

lots of stuff going on so I'll keep it brief, Grassy will rock whatever happens, the island made international news last week about the wallaby kill, I admit its a waste of some great protein, so if you see some King Island wallaby for sale Buy It!!, its the best way to get the stocks down, feeding some drillers doing a survey on the mine that will open next year & making some great winter food.

Just picked some fresh pine mushrooms, will roast them with some garlic & olive oil to go with the roast rump with beetroot salad, have been reading a book by Bill Bryson(The short history of everything), what a great read, full of all sorts of stuff to amaze & think about ( ie, just how lucky we all are!!!). If you get a chance read it, great snippets like the static of a TV is 1per cent residue from the birth of the universe, so if you complain that theres nothing on the telly , you can always watch the birth of creation!!!

Thank god?, for ANZAC day, if that didn't happen I might not be here(I'm very glad I'm here). The menu is about to do a radical change, get rid of all the bullshit & start cooking I hope, winter is trying to get here but the sun keeps shining, the golf will be great when I get up, a clear & crisp day will be had on the course, pure Autumn, a good panna cotta was made this weekend, roasted & ground the spices myself & served with some pears & apples from Tassie.

More computer trouble, I'm an idiot, should have got a Mac!!. What I did get was some great quince's from Tassie, roasted with honey & served with some of the dairy's new yoghurt, also a great Thai ox-tail curry.

Been a month but I'm back after a lot of Tech trouble, had to do a major surgical job on the hard drive & lost a good deal of stuff, but after all its just stuff, I can do without it, the restaurant has been busy with some nice stuff on the menu at the moment. Autumn is here & stews & braises are the go, rich & earthy flavours are all over the menu, first lot of mushrooms were cooked yesterday & will be looking out for the wild varieties.

The rain is back at the start of Autumn, first cold day for a while & I got some pears to poach & to warm things up I'm going to stuff them with a chilli chocolate mousse. Had a quiet Sat night & i'm still amazed by human behavior.

Yesterday was King Island show day, had a game of golf in the morning(48 for 9 holes, need a bit practice!!) got to the show & found out some info on the mine that will be re-opening here at Grassy & checked out the preserve section that I sponsor. My good friend Denise who makes fetta & yoghurt for the restaurant as well as the flowers had a couple in the floral displays & came up trumps with the gold sash for most impressive display, they are now pride of place in the restaurant here at the Grassy Club. Cooked up another ox-tongue to day, it is the best thing on the menu at the moment, char grilled & served with gribiche sauce. The local oysters are spawning so I will be doing an anti-pasto of local & Tassie produce to replace it.

Hi & welcome to my blog, I'm Stephen Russell from Colac in Victoria, cooking here at the Bold Head Brasserie in the Grassy Club on an amazing Island in the middle of Bass Strait. I have been here for 3 years in April & 12 years all up, cooking most of the time, the only other job I've had here was on a crayfish boat as a decky for about 8 monty restaurant on the Island, before moving to Grassy I worked at Parers Hotel, the Currie Club & Boomerang Restaurant. The Restaurant here at the Grassy Club is almost finished, the old photos of the mine & Grassy life taken in the 50's are hung & the new kitchen is broken in & working like a treat. The menu is changing all the time, I've thought about doing a serious printed menu but I hate the idea of having to stick to a set thing, I have a blackboard menu that I can change when need be & the bonus for the locals is there is always something different to choose from.
